蒲焼 (かばやき, Kabayaki) is Kabayaki — a Japanese food (ingredients, meats).
What is Kabayaki?
Kabayaki is a preparation of fish, especially unagi , where the fish is split down the back (or belly), gutted and boned, butterflied, cut into square fillets, skewered, and dipped in a sweet sauce based on soy sauce before being broiled on a grill. Eel kabayaki is often served on top of a bowl ( donburi ) of rice, and called unadon . Besides unagi , the same preparation is made of other long scaleless fish such as hamo (pike conger, 鱧), dojō (loach, 泥鰌), catfish, anago (conger eel, 穴子), and gimpo (gunnels, 銀宝).
