灰汁巻き (あくまき, Akumaki) is Akumaki — a Japanese food (sweet dishes).
What is Akumaki?
Akumaki is a Japanese-style confection. It is made by wrapping glutinous rice in bamboo leaves, then simmering it in a lye solution made by dissolving some sort of plant ash. Akumaki is typically eaten with a combination of sugar and toasted soybean flour (kinako) , with a little salt, or soaked in honey. If it is eaten by itself, it tastes bitter. However, if it is eaten with a lot of sugar and kinako , it takes on a somewhat unusual flavor. Some consider it an acquired taste. A skin of bamboo soaked in lye overnight is used to wrap glutinous rice soaked in the same way. Akumaki is a rice cake but it is not sticky and it does not easily dry out.
