What is Dango-jiru?

Dangojiru (dango soup) doesn't really contain dango dumplings. Instead, the main ingredient resembles noodles; they are made from salt-infused wheat flour that is kneaded into thin, long strips. Dangojiru is famous throughout Oita. The soup itself is miso based but also often contains taro (a root vegetable), carrots, shitake mushrooms, burdock root, and other vegetables.
