What is Karukan?
Karukan is a confection from the Kagoshima Prefecture. It is made from karukan rice flour (軽羹粉, かるかんこ[?]), sugar, and grated nagaimo . Karukan flour is made by washing ordinary rice (うるち) and grinding it more coarsely than regular flour. Water is added to the blended flour, sugar, and nagaimo , and the mixture is then kneaded and steamed. It is like an elastic white sponge.
