What is Sweets?
Kashi , also called okashi , are sweets. As a broad category they can also encompass fruits, where the fruits are called "water candy" ( mizugashi ). There are many kinds of confectionery in Japan, and the classification method is not uniform. In addition to classification by tradition and manufacturing method such as Japanese confectionery and Western confectionery, it may be classified from moisture content and preservation property. Namagashi (生菓子): "wet sweets" contains 30% or more moisture Han namagashi (半生菓子): "half-wet sweets" contain 10% - 30% moisture Higashi (干菓子) : dry confectionary contains 10% or less moisture
