What is Kimchi?
Kimuchi is the Japanese version of Korean kimchi. The process and the ingredients are different, resulting in different flavours, and are frequently a source of heavy disputes. Kimchi is a staple in Korean cuisine. It is a traditional side dish made from salted and fermented vegetables, most commonly napa cabbage and Korean radishes, with a variety of seasonings, including chili powder, scallions, garlic, ginger, and salted seafood. There are hundreds of varieties of kimchi made with different vegetables as the main ingredients. Many Japanese producers skip the fermentation and add artificial sour flavoring using citric acid and gum. The Japanese sometimes use rice paste to give their kimuchi a gluey consistency similar to that found naturally in the Korean version.
