What is Shingen mochi?
Shingen mochi (raindrop cake) typically is made from mineral water, agar, and a sweetener. After being heated, it is molded and cooled.The dish looks like a transparent raindrop. The dessert melts when it enters the mouth and it must be eaten immediately. It will melt and begin to evaporate after twenty minutes. Various versions exist, but the dessert contains a thickener, like agar or glutinous rice flour, and sweeteners, such as sugars or syrups, like brown sugar syrup.
