ソーキ (そおき, Sōki) is Soki — a Japanese food (meats, noodle dishes, soups and stews).
What is Soki?
S ō ki is a specialty of the cuisine of Okinawa Prefecture. Sōki are stewed pork spare ribs, usually boneless, but with the cartilage still attached. Sōki-soba is soba noodles with stewed sōki on top. The sōki are prepared by first boiling to remove excess fat, then stewing in a mixture of awamori , soy sauce, and sugar for three to four hours. Awamori is a distilled drink similar to shōchū . It is used to soften the meat. After stewing,the ribs are served in a bowl of Okinawa soba . Sōki - jiru[?] is a soup containing sōki , seaweed, and daikon, with salt and soy sauce for flavoring. The sōki are first boiled to remove excess fat and drippings, then stewed in the soup until tender.
