What is Tataki?
Tataki refers to two methods of preparing various types of fish or meat. Tosa-mi[?] is a synonym. One method involves searing meat or fish quickly, then marinating it briefly in rice vinegar, and finally slicing it thinly for serving. The second method, also known as namerō (なめろう), involves chopping fish into small pieces and adding some flavoring agents like garlic or ginger. The traditional presentation includes garnishes of thinly sliced scallions and finely shredded ginger, with soy sauce for dipping. The word “ tataki ” means “pounded,” but it does not refer to the preparation of the meat or fish. Instead, it refers to the ginger condiment, which was originally pulverized by pounding it.
