鳥刺 (とりさし, Torisashi) is Torisashi — a Japanese food (special foods).
What is Torisashi?
Torisashi is chicken breast sashimi. It is a regional specialty of Kagoshima and Miyazaki prefectures. Chicken meat is cut into strips and only cooked long enough to sear the outer layer, leaving the inside pink. There are many risks associated with consuming torisashi as the inside is left raw.
