もち米 (もちごめ, mochigome) is glutinous rice — a Japanese food.
What is glutinous rice?
Mochigome is glutinous rice. It is sometimes written as "糯米", but the first character is used only rarely. Glutinous rice varieties have opaque grains and a low amylose content. They are especially sticky when cooked. In Japan, glutinous rice is used in dishes like sekihan (赤飯 ). It also is cleaned, dried, and ground to make mochiko (餅粉[?]), used to make mochi and other dishes. Shiratamako also is made from mochigome , but the rice is washed, soaked, and then ground when wet, leading to a different flavor and springier texture when used in a dough.
