Commonly the green, immature ones are used, but the riper ones seem to become more popular nowadays. Pīman are thinner than Western bell peppers and have a mild bitter flavor. Hot (chili) peppers are referred to as tōgarashi, which is also the name of a spicy powder used as condiment.
