食塩 (shokuen)

食塩しょくえんとしては、麺めんに天然てんねんのミネラルを補充ほじゅうするために、蒔まきで煮詰につめる方法ほうほうを用もちいて得えられた天然てんねん荒塩あらしおを使用しようすることが好このましい。

As for common salt, it is preferable to use natural crude salt obtained by using a condensation method by boiling so as to supply the noodles with natural mineral.

容器内の食塩水が常時均一な飽和食塩水になるようにして安定した殺菌力を維持し、貝類に付着した菌や害虫を確実に駆除して貝類の洗浄を安定的に行なうことができるようにするとともに、容器内の食塩水を流動化させて食塩水が貝類に十分に行き届くようにする。

To maintain stable sterilizing power by making saline solution in a vessel an always uniform saturated saline solution, to stably carry out washing of shellfishes by surely exterminating bacilli and insect pests adhering to the shellfishes, and to make the saline solution sufficiently reach to the shellfishes by fluidizing the saline solution in the vessel.
