Meaning

べったら漬 (べったらづけ, Bettara-zuke) is Bettara-zuke, a Japanese food (pickled salted or fermented).

What is Bettara-zuke?

Bettarazuke is a type of pickled daikon and has a crisp, sweet taste. It is made by pickling daikon with sugar, salt, and kōji. Some recipes add or substitute sake lees, amazake , or unfiltered sake into the recipe. The name bettarazuke is taken from the stickiness of the kōji left over from the pickling process. Bettarazuke has similar figure to takuan , but bettarazuke contains much more moisture because it doesn't undergo a sun-drying process.
