餡こ[あんこ] (anko)

I ate a cake containing anko.

こし餡と白餡の2種類。

There are two types, koshian (strained bean paste) and shiroan (white bean paste).

餡も粒餡と漉し餡とある。

Sweet bean paste can be either tsubuan (sweet bean paste containing pieces of azuki bean skin) or koshian (pureed bean paste).

–漉（こ）し餡を用いている。

- Strained bean paste (smooth bean paste made by passing the beans through a sieve) is used.

その中に餡を入れることが多い。

餡の種類は、粒餡、漉し餡のほか、みそ餡がポピュラーである。

As for the varieties of bean jams, tsubuan (sweet bean jam), koshian (strained seet bean jam), and misoan (sweet bean jam with miso) are popular.

このほか、香川県や岡山県真鍋島のように、小豆の餡（あん、餡子）を入れた餡餅（あんもち）を入れる地域もある。

In addition, mochi with sweet red-bean paste are used in some areas such as Kagawa Prefecture or Manabe-shima island in Okayama Prefecture.

餡が餅の衣になっていることから「餡衣餅（あんころももち）」と呼ばれ、それが「あんころ餅」になったという説がある。

There is a theory that it was called ankoromomochi because the bean jam forms a coating around the rice cake, and this became ankoromochi.

うぐいす餡（うぐいすあん、鶯餡）とは、グリーンピースを茹でたものを潰して、砂糖または蜜で甘い味をつけた緑色の漉し餡のこと。

Uguisu-an is a green smooth bean paste made by crushing boiled green peas and sweetening with sugar or honey.

渋みや雑味がないことによって餡本来の味を落とすことがないとともに、原料である小豆の風味に優れた餡（生餡、こし餡、粒餡）、羊羹などの餡製品を製造する方法を提供する。
